Prosciutto & Peach Flatbread Pizza

    Ingredients:

  • 2 flatbreads
  • 2 heaped tbsp pesto
  • 2 fresh peach, thinly sliced
  • ½ small red onion, thinly sliced
  • I ball of fresh mozzarella, sliced
  • 6 slices Barbaro prosciutto
  • 1 tbsp basil, finely chopped
  • Small handful fresh rocket
  • Balsamic glaze, for drizzling

RECIPE STEPS:

Step 1
Preheat oven to 200°C. Line a baking tray with baking paper.
Step 2
Assemble base; place flatbreads on the tray. Spread pesto evenly over each base.
Step 3
Layer toppings; add peach slices, red onion, mozzarella, and Barbaro prosciutto.
Step 4
Place in oven for 12–15 minutes, or until the cheese is melted and bubbly and the flatbread edges are golden and crisp.
Step 5
Remove from oven. Top with basil, fresh rocket and a drizzle of balsamic glaze.
Step 6
Cut into pizzas slices and eat immediately.
