Preheat oven to 200°C. Line a baking tray with baking paper.
Assemble base; place flatbreads on the tray. Spread pesto evenly over each base.
Layer toppings; add peach slices, red onion, mozzarella, and Barbaro prosciutto.
Place in oven for 12–15 minutes, or until the cheese is melted and bubbly and the flatbread edges are golden and crisp.
Remove from oven. Top with basil, fresh rocket and a drizzle of balsamic glaze.
Cut into pizzas slices and eat immediately.
